Smores Ice Cream
Want s’mores? This S’mores Ice Cream is a toasted marshmallow ice cream with graham cracker pieces and fudge sauce.

Are you outdoorsy? I’m not.
Don’t get me wrong – I enjoy the sun, the landscape, the fresh air, the bonfires.
What keeps me from enjoying it as much are bugs. I hate bugs. A few weeks ago, I was grilling hot dogs. I thought, why don’t I grill more often? Then came the bugs.
A bumblebee wouldn’t leave me alone. A spider crawled up the leg of the table. Some unknown thing threatened my hot dogs.
Ah yes, this is why I don’t like being outdoors.
I’m that girl who locks herself up in the air conditioner while watching Master Chef eating ice cream. S’mores Ice Cream, to be exact.
A few weeks ago, I made Toasted Marshmallow Ice Cream Cookie Sandwiches.
I loved melting toasted marshmallows into the base like I did with my s’mores hot chocolate.
This time, I made S’mores Ice Cream with a toasted marshmallow ice cream base with graham cracker pieces and fudge sauce swirled in.
Summer in a bowl without all of the creepy crawlers.

You know, I envisioned Smores Ice Cream to be white, like marshmallows. Instead, it’s brown.
I guess that makes sense because technically toasted marshmallows *are* brown.
Brown or white, just close your eyes and imagine yourself sitting around a campfire telling ghost stories.
Actually, I never sat around a campfire telling ghost stories, but hey they did on tv.

I was debating on chopping up the iconic Hershey bar to mix in, but I chose fudge sauce to represent the melted chocolate after adding the toasted marshmallow.
The graham cracker pieces do get soft from the ice cream, but I actually liked the texture.
Some of you may not like that, so one suggestion is not mixing them into the ice cream but rather crumble up the crackers and use as a topping after scooping.

Smores Ice Cream
Want s’mores? This sweet and creamy S’mores Ice Cream is a toasted marshmallow ice cream with graham cracker pieces and chocolate fudge sauce. It’s summer in a bowl without having to build a campfire!
Ingredients
- 12 regular-sized marshmallows
- 1 cup heavy whipping cream
- 1/2 cup whole milk (do not substitute low or skim milk)
- 1/3 cup granulated sugar
- 1/8 teaspoon table salt
- 2 large egg yolks, room temperature
- 1/2 teaspoon vanilla extract
- 1/2 cup chopped graham crackers
- 1/4 cup hot fudge sauce (homemade or store bought)
Instructions
- Preheat the broiler. On a broiler-safe pan, add the marshmallows in a single layer then toast until brown, rotating to toast all of the sides. Do NOT walk away as this only takes about a minute. Remove from the broiler and cool.
Alternately you can toast your marshmallows with a blowtorch or with a metal skewer over a gas burner. - In a large saucepan, warm up 1/2 cup cream, milk, sugar, and salt, whisking to dissolve the sugar.
- In a small bowl, whisk the yolks until lightly beaten. Whisk in some of the warm cream mixture then pour it all back into the saucepan.
- Bring to a boil, whisking often, until thickened. Remove from the heat and whisk in toasted marshmallows until melted.
- Pour mixture through a mesh strainer into a large bowl sitting in an ice bath. Whisk in the remaining 1/2 cup heavy cream and vanilla.
- Cool in the ice bath until room temperature then remove from the bath and refrigerate for at least 1 hour or until cold.
- Churn in your ice cream maker according to the manufacturer's instructions. Transfer to an airtight container, layering it with fudge sauce and graham cracker pieces as you go along. Freeze until firm, roughly 4 hours or overnight.
Homemade ice cream will last up to 1 month when frozen properly.

Being the nutty crunchy sort, I will think of this ice cream as Unbleached S’mores Ice Cream and be proud that it is not the white color you envisioned, because clearly if it’s not white it must be healthy, right?

I think using the fudge sauce was a better choice than the chunks of chocolate. S’mores chocolate is melty anyway!

YUM!! I made a ice cream very similar, but i used chocolate ice cream for base. S’mores is the best combo!

Carla, you’re hilarious! We’re cut from the same cloth – I am PHOBIC when it comes to bugs. I have a bug-dar like you wouldn’t believe – if there’s a bug in the vicinity, I’ll see it. Then I’ll be obsessed with watching it to make sure it doesn’t come near me. Plus I hate being dirty and I have the worst seasonal allergies so me ‘n mother nature aren’t that tight. I’ll join you on the couch with a giant bowl of this ice cream. I love Master Chef – the last season was awesome. You should try to find the old episodes and watch it. I really liked the winner (I won’t spoil it here in case you don’t know who it is). I’ve got the current season PVR’d and haven’t started watching yet. Can’t wait! I just need to make this ice cream and then my tv-watching experience would be complete.
I know who won last year because of her…unique characteristic. I watched the year before that, but I can’t even remember the girl’s name. I have crappy internet, but some day I will catch up on that and Top Chef (I haven’t watched 3, 4, or 6). I wish we lived so much closer so we can both eat bowls and bowls of ice cream while watching tv all weekend and forget about our jobs. Oh and I’ll bring the bug spray.

Ha! A butterfly landed on my foot the other day while I was in the garden. I had no clue and freaked out. Silly little butterfly.
Oh noooo – what a terrible incident you got. I tend to stay away from Summer, too, because of the heat and it makes me cranky most of the time. :) Glad this ice cream fix the problem. Smores ice cream sounds definitely a real deal for Summer time!

I flipped out last night because a beetle appeared on my arm while walking the dog. A harmless “cute” little beetle. Yeah. I like the indoors. I stay this pale year round (you shall see how white my legs are in July.) p.s. I’m in the fudge camp, I’m thinking the chopped chocolate would get in the way of the crunchy graham crackers!
A few years ago I had a ladybug infestation in my dorm room because the weather was warm out. I was so freaked out I had trouble sleeping. It’s impossible to kill a million lady bugs, btw. And my legs never burn/tan, so I’ll have tan arms and white legs haha
I camp simply to have S’mores on an open fire. This ice cream is made for me.

May I ask why you separate a cup of the cream and not cook it with the rest?
I just made this recipe. It produced about half the amount any other recipe I’ve tried has produced. Maybe a pint? Did yours also only make this much?
I can’t taste the marshmallow! I think I even put more than called for!
It’s a technique David Lebovitz uses (he’s like an ice cream god). It helps lower the temperature of the custard right away to stop further cooking.
And yes it does only make one pint (hence why I put one pint as the serving size ;) )

This is awesome ice cream!! We had a campfire on July 4th so I actually used campfire toasted marshmallows in mine. Love this ice cream. Great recipe!! Will be making it again!
