The downside to small batch baking is you’re going to have leftover egg whites.
That’s often followed with “What can I make with leftover egg whites?” Then you forget and end up tossing out the egg whites on garbage night.

How To Store Leftover Egg Whites
Until you’re ready to use your extra egg whites, you need to properly store them first. The easiest way is to store them in airtight containers in the refrigerator.
I personally like to use small glass jars because plastic can retain traces of fat, which is important to avoid if you’re going to whip them for meringue. Fat is the enemy of whipping egg whites.
I also store 1 egg white per container to keep track of how many I have. Of course if you already have plans for all of the egg whites, you can store them in the same container because you don’t need to count them later.
You can store leftover egg whites in the refrigerator for 2-3 days (although I personally have gone up to a week).
How To Freeze Leftover Egg Whites
If you’re not going to use your leftover egg whites quickly, you’ll want to freeze them.
The best way to freeze egg whites is to use an ice cube tray. Each cube gets 1 egg white.
Once frozen, you can pop them out and transfer to a freezer-proof bag. That way you know how many leftover egg whites you have.
