What To Do With Leftover Egg Whites
Have leftover egg whites in your kitchen? Here’s a comprehensive recipe guide on what to do with leftover egg whites so you don’t have to throw them out again.

I’ve been developing small batch recipes for you for years now.
In the beginning it was tough figuring out how to halve an egg (because who wants to measure literally half an egg?!), but eventually I learned halving an egg usually means using the egg yolk only.
The downside to small batch baking is you’re going to have leftover egg whites.
That’s often followed with “What can I make with leftover egg whites?” Then you forget and end up tossing out the egg whites on garbage night.
Sound familiar?
That’s why I’m bringing you my guide on What To Do With Leftover Egg Whites! It’s a list of recipes using egg whites so you no longer waste them.
I organized the list by the number of egg whites each recipe uses. That way you don’t have to click through to each recipe to see what you can (or can’t) make.

How To Store Leftover Egg Whites
Until you’re ready to use your extra egg whites, you need to properly store them first. The easiest way is to store them in airtight containers in the refrigerator.
I personally like to use small glass jars because plastic can retain traces of fat, which is important to avoid if you’re going to whip them for meringue. Fat is the enemy of whipping egg whites.
I also store 1 egg white per container to keep track of how many I have. Of course if you already have plans for all of the egg whites, you can store them in the same container because you don’t need to count them later.
You can store leftover egg whites in the refrigerator for 2-3 days (although I personally have gone up to a week).

How To Freeze Leftover Egg Whites
If you’re not going to use your leftover egg whites quickly, you’ll want to freeze them.
The best way to freeze egg whites is to use an ice cube tray. Each cube gets 1 egg white.
Once frozen, you can pop them out and transfer to a freezer-proof bag. That way you know how many leftover egg whites you have.

Savory egg white recipes
Not all egg white recipes have to be dessert! One easy way to cook leftover egg whites for dinner is to bread a protein, such as shrimp or chicken.
This method is called dredging. Usually you dip the protein into flour, then whole egg, then coating, but you can use egg whites instead of a whole egg, which as a bonus helps cut back on fat.
My Baked Coconut Shrimp For Two demonstrates this method using 2 egg whites. It can also be made with chicken.

What to do with 1 leftover egg white
Having only 1 leftover egg white is the toughest because most recipes call for 2 or more extra egg whites.
My Small Batch Flourless Chocolate Cookies solves this problem!
They’re egg white cookies similar to meringue cookies but flatter, which means no piping and no whipping egg whites required.
