Since I’ve been blogging for 17(!) years now, I try to keep a list of which recipes I’m missing so I can complete my small batch recipes catalog.

Recently I realized I’m lacking in basic breakfast recipes for two.

Sure I have small batch pancakes and French toast casserole for two, but you know what’s missing?

Yes, I have my ham and cheese waffles but those are savory waffles.

Those aren’t the waffles you’re going to make when you want to add chocolate chips and strawberry sauce.

THESE are the waffles you’re going to make. Golden brown, crispy, fluffy, and delicious thanks to the tangy buttermilk.

They’re a blank canvas for all kinds of toppings – butter, maple syrup, fresh blueberries, strawberry jam, whipped cream, the choices are endless.

And if you’re a breakfast for dinner kind of person, you can even serve fried chicken on top to make chicken and waffles.

Which waffle maker do you need?

Not all waffle makers are created equal! It took me several tries with different brands as most (cheaper) brands don’t get hot enough, leaving you with soft waffles.

Finally I landed on this round waffle maker that is both affordable and leaves you with crispy, golden brown waffles on the highest setting.

Because there are so many shapes and sizes out there for waffle makers, your servings may vary.

This waffle recipe for two makes 1 cup waffle batter, which for my round waffle maker made 2 crispy, golden brown waffles with about 1-2 tablespoons leftover (leaving me with a snack waffle).

I tried really hard to scale it down for literally 2 waffles, but it wasn’t working. Batter too thick, not enough batter, batter too thin, etc.

The perfect ratio is the one I’ve written below.

Plus I figured some machines could use that little extra batter if they’re bigger than the one I used.

To make your small batch waffles, you’ll need the following ingredients:

  • Flour: Helps thicken your batter so you can pour it into your waffle maker.
  • Sugar: Adds sweetness plus helps caramelizing the waffles (aka making them golden brown)
  • Baking powder: Helps your waffles rise as well as making them fluffy.
  • Salt: Seasons the batter (especially if using unsalted butter)
  • Buttermilk: Makes a pourable batter plus buttermilk adds a little bit of tang and fluffiness
  • Melted butter or oil: Butter is preferred for extra flavor, but I’ve also used oil for when I don’t want to deal with melting it.
  • Vanilla: Flavors the batter for more depth
  • Mix-ins such as chocolate chips or blueberries: Great way to add extra flavor!

Can I substitute regular milk for buttermilk in waffles?

Normally I’d be all for using whole milk instead of buttermilk. After all, who wants to run to the store for one item you don’t usually have on hand?

However, this waffle recipe for two is the one time you do NOT want to skip the buttermilk. Not only is the texture fluffier, it tastes even better.

In fact the batter was so good, I was actually snacking on plain waffles while testing this recipe. No toppings needed (although I still highly advise butter and maple syrup for fun purposes).

How To Make Waffles For Two

Ready to make your waffle recipe for two? Here’s how to get started:

  1. Whisk together the flour, sugar, baking powder, and salt.
  2. Whisk together the buttermilk, melted butter, egg, and vanilla
  3. Pour the wet ingredients into the dry ingredients then stir together until blended and smooth. It’s ok to have a few lumps as you don’t want to overmix it.
  4. Rest batter for 5 minutes so it thickens and the gluten from the flour relaxes for a fluffy texture.
  5. Pour batter into hot waffle maker then cook until toasted. Repeat with the remaining batter.

Waffles are best eaten soon after being made. Refrigerate leftovers for up to 2 days or freeze for up to 3 months. Reheat in a toaster or preheated 350F oven.

What To Serve With Buttermilk Waffles

The best thing about this waffle recipe for two is they’re a blank canvas for almost any topping you’d like!

Go classic with butter and maple syrup.

Add fresh fruit with strawberry curd or blueberry jam without pectin.

Make it a sweet morning with chocolate whipped cream or peanut butter whipped cream then drizzle with hot fudge sauce.

You can even go savory and serve air fryer fried chicken on top for chicken and waffles.

How do you use whole milk instead of buttermilk?

I highly advise using buttermilk for taste and texture but if all you have is whole milk, add an extra 1/4 cup flour to your batter. Otherwise it’ll be too thin.

Why aren’t my waffles crispy?

Some waffle makers don’t get hot enough. The machine I used only makes crispy waffles on the highest setting. I highly recommend getting to know your appliance so you can figure out its quirks and nuances.

Can you freeze buttermilk waffles?

Yes! Waffles freeze beautifully. Let them cool completely then transfer to a freezer-safe bag and freeze for up to 3 months.

How do you reheat waffles?

Reheat leftover waffles in a toaster or preheated 350F oven.

Can you double this recipe?

Yes. Double the ingredients for 4 waffles.

Ingredients

  • 3/4 cup all-purpose flour
  • 1 tablespoon granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon table salt
  • 1/2 cup whole-fat buttermilk, room temperature*
  • 1 large egg, room temperature
  • 2 tablespoons melted unsalted butter or vegetable oil
  • 1/4 teaspoon vanilla extract
  • 1/2 cup mix-ins such as chocolate chips or blueberries (optional)

Instructions

  1. In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
  2. In a large measuring cup or another mixing bowl, whisk together the buttermilk, egg, melted butter/oil, and vanilla.
  3. Pour the wet ingredients into the dry ingredients then stir together until well blended and smooth. A few lumps are ok as you do not want to overmix. However, there should be no dry bits of flour left.
  4. Stir in any mix-ins if using then rest batter 5 minutes to allow it to thicken and the gluten to relax. Do not skip this part!
  5. Preheat your waffle maker according to the machine's instructions. Lightly grease with cooking spray.
  6. Once hot, pour roughly 1/2 cup batter into your waffle maker. It should be thick but pourable (not thin and runny)*. Cook until golden brown (time will vary by machine, but mine takes about 2 minutes). Repeat with the remaining batter.

    Waffles are best eaten the day they're made. Leftovers can be refrigerated for up to the 2 days and frozen for up to 3 months. Reheat in toaster or preheated 350F oven.

Notes

  • *These waffles are at their absolute best with whole-fat buttermilk. However, if you do decide to use whole milk you will likely need to add an additional 1/4 cup flour to thicken the batter.
  • This recipe makes 1 cup waffle batter. With my round waffle maker, I got 2 waffles plus a little extra for a small snack waffle. Your servings will heavily depend on your waffle maker.
