Bag of smores popcorn with marshmallow and chocolate

It’s no secret I love s’mores because of the gooey toasted marshmallows and melted chocolate as shown with smores ice cream, smores bars, and smores hot chocolate.

I also love popcorn. I make stovetop popcorn probably once a week.

So naturally when I was looking for a sweet snack to munch on while watching my favorite tv shows, I thought about Smores Popcorn.

It’s crunchy caramel popcorn drizzled with chocolate then tossed with mini marshmallows and graham cracker crumbs.

The drizzle method is similar to making my chocolate covered popcorn so the chocolate is distributed evenly instead of mixing everything together into clumps.

Normally I would make my caramel popcorn recipe for this, but I was out of kernels. Since I had to go to the store anyway, I bought a box of caramel popcorn to save time.

That also means you only need 4 ingredients to make this easy smores popcorn! All you have to do is melt chocolate chips then mix everything together.

Why You’ll Love This Smores Popcorn Recipe

  • Makes a great gift! Package your caramel popcorn in treat bags to give as homemade gifts for Christmas and birthday parties.
  • Makes popcorn for two! – This small batch popcorn makes enough for date night on the couch.
  • Can easily double or triple this recipe! – Since there are only 4 ingredients involved, you can easily scale this recipe up to serve at parties.

  • Chocolate chips: – Used to bind the ingredients together
  • Caramel popcorn: My dad loves Fiddle Faddle, so that’s what I used. However, you can use any brand of caramel popcorn you’d like or make homemade.

How To Make Smores Popcorn

Making this smores popcorn is SO easy, there are only a few steps:

  1. Melt chocolate chips and drizzle half onto some parchment paper.
  2. Add popcorn, marshmallows, and graham crackers on top in a single, ensuring each ingredient is gently pressed into the chocolate.
  3. Drizzle the rest of the melted chocolate on top.
  4. Cool until the chocolate has hardened then break into pieces for snacking.

Smores popcorn is best eaten the day it’s made, but you can store it in an airtight container at room temperature for up to 2 days. At this point the popcorn will lose its crunch (but still totally edible).

Ingredients

  • 1/2 cup semisweet chocolate chips, melted
  • 2 cups caramel popcorn (homemade or store bought)
  • 1/2 cup mini marshmallows
  • 2 tablespoons crushed graham cracker crumbs

Instructions

  1. Fill a medium pan with about an inch of water then bring to a simmer. Once simmering, turn the heat all the way down to low.
  2. Add chocolate to a heatproof bowl larger than your pan then place over the water (the bowl should not be touching the water - the steam will melt the chocolate). Stir with a rubber spatula or until completely melted.
  3. Drizzle half of the chocolate onto a baking tray lined with parchment paper. Add popcorn, marshmallows, and graham crackers in a single layer, gently pressing into the chocolate. Drizzle the remaining chocolate on top.
  4. Refrigerate until the chocolate hardens, about 30 minutes. Break it into bite-sized pieces then serve at room temperature.
Popcorn is best eaten the day it's made but can be stored at room temperature for up to 2 days.
