Mini Skillet Cookies (For Two)
When you’re craving soft and chewy peanut butter cookies but don’t want to bake a dozen, make Mini Skillet Cookie instead! Baked in two small skillets until golden brown, it’s the perfect date night dessert for two. Serve with vanilla ice cream and hot fudge sauce for a decadent cookie sundae.

As if I don’t eat enough dessert in my life, the other day I really wanted small batch chocolate chip cookies with peanut butter.
Soft, chewy, and gooey with the harmonious combination of chocolate and peanut butter.
However, I didn’t want to be stuck with an entire plate of small batch peanut butter cookies as I’d eat every single one.
I can’t be the only one in this dilemma, right? You want a cookie but you don’t want to eat 12 cookies. You want to eat one (or two) cookies and be done.
Sure, I have my microwave chocolate chip cookie and microwave peanut butter cookie, but the texture is different because they’re weren’t baked in an oven.
I wanted to make literally peanut butter cookies for two freshly baked from the oven.
And that’s exactly what I made with my Mini Skillet Cookie – two individual peanut butter chocolate chip cookies baked in a skillet with chopped peanut butter cups instead of chocolate chips.
The edges are golden brown and crispy thanks to the cast iron skillet while the middle stays soft and moist.
There’s no sharing. There’s no fighting over the last crumb. It’s yours and yours alone (unless you have a nebby cat like mine who thinks everything is his).
Top each one with vanilla ice cream and hot fudge sauce for the ultimate cookie sundae.
Question is – will you share the second peanut butter skillet cookie or keep both for yourself?
Why You’ll Love This Mini Skillet Cookie Recipe
- Makes cookies for two! – Now you have the perfect date night dessert for two.
- Stunning presentation! – Everything looks way more impressive when served in a cast iron skillet.
- Simply irresistible! – I don’t know a single person who could look at this cookie mini skillet and go “no thank you” (except if you’re allergic to peanut butter, of course)

Ingredients For Mini Skillet Cookie
Here’s what you need to make your peanut butter skillet cookie:
- All-purpose flour: Flour helps make the dough scoopable without being too sticky. Always measure by spooning the flour into your cup, not scooping and packing it in.
- Baking soda: Leavening agent that helps the cookie rise as well as produce crisp edges with a soft middle.
- Salt: It brings out the flavor of the dough, especially since you’re using unsalted butter.
- Peanut butter: Use regular processed peanut butter, not natural. Natural has oil that separates, which results in a greasy cookie.
- Unsalted butter:Helps the cookie spread during baking as well as adds delicious flavor
- Brown sugar: Sweetens the cookie as well as reacts with the baking soda due to its acidity from the molasses.
- Granulated Sugar: Contributes to the cookie’s chewy texture.
- Egg: Binds dough together
- Vanilla: Much like salt, vanilla brings out the other flavors in dessert.
- Peanut butter cups: Acts like chocolate chips in the cookie
Which skillet should I use?
You’ll need two 6.5 inch skillets. Cast iron skillets will give you the best result, but you can use regular skillets as well.
Don’t have any? Bake all of the dough in one 8 inch cast iron skillet.

How To Make Mini Skillet Cookie
Making this mini skillet cookie recipe is super easy! Here’s how to make it:
- Beat together peanut butter, butter, and both sugars until smooth and creamy.
- Add egg and vanilla.
- Mix in flour, baking soda, and salt until dough forms then add peanut butter cups.
- Spread into two mini skillets.
- Bake at 350F for 15-18 minutes or until golden brown.
- Cool 15 minutes before eating.
Storing and Freezing
Store leftovers at room temperature for up to 4 days.
To freeze your small skillet cookie, let it cool completely then remove it from the pan, wrap in plastic wrap, and place in a freezer-safe bag. Freeze for up to 3 months.
To thaw, let it sit out at room temperature for 1 hour. You can also pop it back into the oven (either back in the skillet or on a cookie tray) and reheat.
Tips, Variations, and Substitutions
- To make a traditional chocolate chip cookie, swap out the peanut butter for more butter and chocolate chips for the peanut butter cups.
- Use peanut butter chips instead of peanut butter cups for a chocolateless cookie.
- Don’t have 6 inch skillets? Bake it all in one 8 inch skillet like I did with my chocolate chip skillet cookie.

What To Serve With Mini Skillet Cookie
Although your small skillet cookie recipe is delicious as is, it’ll taste even better as a cookie sundae!
As mentioned earlier, you can serve each one with vanilla ice cream and hot fudge sauce.
You also top it with strawberry sauce or caramel sauce.
If that’s too heavy for you, go lighter with whipped cream, peanut butter whipped cream, or chocolate whipped cream.

You know how I feel about peanut butter and oh, the ooey gooeyness of it all! Love the styling!
Thanks!
I so badly want to reach through the screen and snag a skillet. These are impressive!
I hope no computer screens were damage in the process ;) Thanks!
This is pretty much the perfect dessert in my book. Because well 1) you know I love cookies and 2) chocolate and peanut butter. Doesn’t get any better, oh actually it would if I had it in front of me.
These look incredible and those little skillets are darling!
I’ve been hooked on mini skillet desserts lately – especially ones that take 15 minutes or less to prep. Bookmarking this for next time the craving strikes!
My husband and son enjoyed this recipe! We did not have pb cups but subbed with chocolate chips. This did affect the total pb flavor, so will try again with pb cups next time. We used 5” cast iron skillets. Had left over dough that i baked in a small ramekin. The skillets had more than enough dough. Baked 18 min. Perfect balance of crispiness and ooey-gooey-ness!
Yea the PB cups do make a difference for peanut butter flavor, but regardless I’m glad you were able to make them work!
