Apparently there is a viral chocolate banana bark recipe going crazy on social media.

Truth is, I’ve had this Banana Bark on my site since 2014.

Although mine is a bit different because 1 – there is no dark chocolate involved and 2 – I don’t use fresh banana so my banana bark recipe can be given as gifts or stored at room temperature.

I would describe it as peanut butter bark made with white chocolate, jarred peanut butter, and freeze-dried bananas.

That’s it! Only 3 ingredients to make such as easy snack.

Peanut butter bark usually involve semisweet or dark chocolate like my chocolate pretzel bark.

However, I wanted the peanut butter to shine so I opted for white chocolate (which technically speaking is not chocolate due to the lack of cocoa solids).

I also used jarred peanut butter and not peanut butter chips as most peanut butter bark recipes suggest. I always have peanut butter but not the chips.

It’s nutty, crunchy, and irresistible.

Ingredients For Banana Bark

Here’s what you need to make your banana peanut butter bark:

  • Freeze-dried bananas: Not the same as banana chips (see below)
  • White chocolate: Technically not chocolate as it doesn’t contain cocoa solids. Use high quality as the taste will shine through.
  • Peanut butter: For smooth creamy results, use smooth processed peanut butter

What are freeze-dried bananas?

Freeze-dried bananas are banana slices that went through a freeze-drying process to remove all moisture while preserving their natural state.

They are not the same as banana chips. They taste exactly like you were eating fresh banana slices but without the moisture (or mushiness) and the texture is a bit powdery. Banana chips are crunchier and more dried out.

You can find freeze-dried bananas where you find dried fruit. Usually I have the best luck at Trader Joe’s.

How To Make Banana Bark

Here’s how to make banana peanut butter bark:

Melt white chocolate and peanut butter together until smooth.

Cool until firm enough to break into pieces.

That’s it! Store leftover bark at room temperature for up to 1 week or refrigerate for 2-3 weeks.

Can I use semisweet chocolate instead of white chocolate?

Yes! It’ll obviously be a different color but still just as delicious.

What if I’m allergic to peanut butter?

You can leave it out and pour melted white chocolate over the bananas. Or do a combination of white and dark chocolate.

Can I leave out the banana?

Yes. Melt together your white chocolate and peanut butter, pour into a single layer on parchment paper, then add various toppings such as pretzels, chocolate chips, chopped peanut butter cups, or nuts.

What can I substitute for the freeze dried bananas?

You can use banana chips (which will be crunchier) or fresh banana slices (which you’ll have to store in the fridge or freezer).

Ingredients

  • 1/2 cup freeze-dried bananas
  • 4 ounces high-quality white chocolate, chopped
  • 1/4 cup smooth processed peanut butter

Instructions

  1. On a cookie sheet lined with parchment paper, place the banana slices in a single layer close together. They should be almost touching.
  2. Bring a medium pot of water to a simmer. Once simmering, turn off the heat.
  3. Put the chocolate and peanut butter in a heatproof bowl and place it over the water (make sure no steam or water gets in the bowl). Let it sit over the hot water, uncovered, until about 2/3 melted. Gently stir it and allow it to melt further until completely smooth.

    White chocolate is very sensitive when melting, so don't rush it. Otherwise it may seize (clump).
  4. Once fully melted, pour over the bananas then spread until all of the slices are covered.
  5. Let sit at room temperature for 1 hour or until set (you can refrigerate to speed this up). Cut into desired pieces.

    Store leftover bark at room temperature for up to 1 week or refrigerate for 2-3 weeks.

Notes

  • Don't have freeze dried bananas? Use banana chips (which the texture will be crunchier) or fresh bananas (which you'll have to store in the fridge or freezer)
  • Don't want to use banana? Leave it out altogether then spread the peanut butter chocolate evenly into a single layer. Add various toppings such as pretzels, peanut butter cups, nuts, and more.
  • Don't want to use peanut butter? Leave it out and make white chocolate bark.
