If you live in the US, it’s probably no secret that this is going to be the hottest week ever. I purposely planned my weekly dinner menu around not using the oven.

That means I’ll be making air fryer fajitas for my chicken fajita salad.

It also means I’ll be making lots of refreshing snacks and sides to eat, starting with this Watermelon Salsa.

It’s a fruit salsa made with juicy watermelon, spicy jalapeno, green onion, cilantro, and lime juice.

That’s right! Unlike my fresh garden salsa recipe, my recipe for watermelon salsa is made without tomatoes.

Because watermelon is made up of 92 percent water, this summer snack will rehydrate you as outside temperatures reach over 90F degrees.

Not to mention it’s also considered a healthy snack since it’s low in calories and high in vitamins and antioxidants.

Ideally you’d eat this watermelon salsa recipe with chips, but to make it more dinner friendly I used it as a refreshing garnish for my spicy shrimp tacos to balance the heat from the sriracha shrimp.

Ingredients For Watermelon Salsa

You only need 5 easy ingredients to make this healthy watermelon salsa recipe:

  • Watermelon: For the best watermelon, buy a whole melon that’s symmetrical, heavy for its size, and has a yellow sunspot.
  • Green onion: Adds a bit of an oniony bite. You can also use white or red onion.
  • Jalapeno: Adds a bit of a spicy kick. You can also use another spicy pepper or green bell pepper for no spice.
  • Cilantro: Adds freshness to the dish. Don’t like cilantro? Try fresh mint or leave the herb out altogether.
  • Lime juice: Acidity needed to balance the sweet and heat

How To Make Watermelon Salsa

You won’t believe how easy it is to make this recipe for watermelon salsa! All you have to do is:

  1. Mix together watermelon, green onion, jalapeno, cilantro and lime juice.
  2. Refrigerate for at least 30 minutes before serving.

Easy peasy lime juice squeezy!

Fruit salsa is best eaten the same day as the melon will break down the longer it sits, but you can refrigerate it for up to 2 days.

That means you can make it 1 day ahead of time to help with prep time.

What To Eat With Watermelon Salsa

As mentioned earlier, you can serve your fruit salsa with nachos or inside shrimp tacos.

You can also use it as a topping for grilled chicken or fish such as grilled sockeye salmon from Foxes Love Lemons.

Can I make watermelon salsa without fresh cilantro?

Yes. Substitute fresh mint for the cilantro or leave herbs out altogether.

Can I substitute another fruit for the watermelon?

Yes. Use another juicy fruit such as peaches, mango, or pineapple for the watermelon.

Can I leave out the jalapeno if I don’t want it spicy?

Yes. Use green bell pepper for crunch without the spice.
