(Really Thick) Smores Rice Crispy Treat Bark. Or (Really Thin) Smores Rice Crispy Treats. What’s in a name anyway? All you need to know is these treats are one of my favorites. I had this idea for rice crispy treat bark written in my notebook from December. You know, the long list of ideas to try but will probably never get to half of them because the list keeps growing? Well Miriam of Tales of an Overtime Cook tweeted one day about a rice crispy treat bark she did. Funny because I had an idea myself! We decided to team up and post our bark ideas together. Miriam made Chocolate Peanut Butter Crispy Treat Bark and I made this Smores Rice Crispy Treat Bark.

Bark is a really thin layer of chocolate broken into pieces. I thought it would be fun to do a rice crispy treat version. Except my layer is an inch thick and not quite thin as I’d like. Maybe I was just tired. Or maybe I didn’t account for the toasted marshmallows and chocolate being piled on top. Either way, I didn’t realize how thick it was until I started cutting it. I asked Miriam if it was ok to still call it bark. She promised she wouldn’t call the bark police.

When I say smores, I mean it. I’ve seen rice crispy treats pretending to be smores, but unless you toast the marshmallows, they aren’t smores. Not sure if you get see the toasted parts in the pictures, but I promise the taste is distinguishable. Then I used cookie butter to mimic graham crackers. I guess looking back on it, I could’ve stirred in graham cracker crumbs, but cookie butter is more fun (and if you are new to the cookie butter concept, you can read about it in my Smores Blossom cookies post). If you don’t have cookie butter, you can substitute peanut butter. Or leave it out altogether and just stir in a bunch of graham cracker crumbs.

2 Tablespoons unsalted butter
3 1/2 cups mini marshmallows
1/4 cup cookie butter
3 cups rice crispy cereal
12 ounces semisweet chocolate baking squares, chopped into pieces

  1. Line a cookie sheet with parchment paper. Set aside.
  2. In a large pot, melt the butter. Once completely melted, add 2 cups of the marshmallows and stir until melted. Add the cookie butter and stir until everything is smooth. Remove from the heat and add cereal. Stir until everything is completely coated.
  3. Spread the cereal mixture onto the cookie sheet and make the layer as thin as possible (my thick rectangle was 11x8 inches). Let cool completely.
  4. When the cereal layer is cool, top with the remaining 1 1/2 cups mini marshmallows. Broil until all of the marshmallows are toasted (you may need to turn your pan if some are cooking faster than others). Let cool completely.
  5. Place the chocolate into a heatproof bowl. Heat the bowl over barely simmering water and melt the chocolate (do not let the bottom of the bowl touch the water). Once the chocolate is completely melted, pour over the toasted marshmallow layer. Let the chocolate cool and harden before serving (if you refrigerate it, let sit at room temperature for a few minutes for easier cutting).

  1. Dude, I’ve been waiting for this recipe. These will be made this week.

  2. Thick or thin doesn’t matter. The only thing that matters is that I want one right now. Yummy.

These look really, really good, Carla! Great job!

  4. Any way you slice them, these look delicious, m’dear! I wouldn’t turn them down, thick or thin.

  5. What a fabulous idea! I must make these!

  6. *Drool*. If I had time at work I’d be making these ASAP for SURE

  7. Carla,
I am the bark police (at least when my mild-mannered pup Simon goes outside at 4 am and turns into Barky McBarkerson in the back yard, and I don’t want to risk waking up the neighbors) and I’ve got absolutely no problem calling this bark.
    It looks delicious. Thanks!

    • Oh good glad I got the Bark Police’s approval ;) Also, you win the best neighbor award. I hate when my landlord’s dog barks outside my bedroom window in the morning…. Thanks Kirsten!

  8. Love this dessert Carla. It has all my favourite things in one place. I’d eat a boatload of it.

  9. This version looks awesome Carla! I think thick is a good thing. :)

  10. Holy wow…I want!!!

  11. You’re my s’mores idol. I will study you. Learn from you. Be in awe of the amazing treats you share.

  12. These look PHENOMENAL! I’ve had rice krispie treats on the brain lately, and this looks like the perfect scratch for my itch. Yum.

  13. Thick, thin, cookie butter vs. graham crumbs, whatever the name may be, you don’t have to make ANY excuses for this treat, Carla. It’s fantastic and perfect in every way. I’d shovel it into my ravenous mouth if I had it in front of me right now.

  14. Ummm… YUM! S’mores are like the best thing ever, and then you went and made them even better by adding rice crispies and make them into a “really thick” bark. Need. Them. Now.

  15. This. Is. INCREDIBLE! There are two things my mum loves: s’mores and Rice Crispy treats. If I made her a batch of these she would FREAK THE HECK OUT!

Also, in Australia we have a catch-all term for things that are too thick to be bark but they’re not brownies or bars– slice ;)

  16. How fun is this. So many flavor varieties!

  17. Thanks for the mention, Carla! I LOVE, love a thick Rice Krispie treat. Swooning.

  2. […] Recently, I mentioned to my friend Carla that I made rice krispy treat bark. She was floored. “So did I!” I had just finished wrapping up my photo shoot, so I asked her for details. Turns out, our ideas weren’t exactly the same, but the idea was similar. Total coincidence. (Or, as I like to think of it, great dessert minds think alike!)
