Roasting butternut squash seeds is one of the easiest recipes you can make because all you do is toss them with some olive oil and seasonings to bake until crispy.
For an even faster snack, you can roast butternut squash seeds in an air fryer.
You can also make them as a crunchy garnish for recipes that need some texture, such as soups and salads.
Although this guide focuses on butternut squash, you can easily use another winter squash variety such as acorn or even pumpkin.

Ingredients For Roasted Butternut Squash Seeds
You are only a few ingredients away from butternut squash seeds roasted:
- Squash seeds: Although I’m focusing on butternut, you can use seeds from any winter squash.
- Olive oil: Because you aren’t using many ingredients, quality matters so I highly recommend using olive oil. However if budget is an issue, you canuse vegetable oil. It’ll have less flavor, but you can easily make up for that with spices.
- Salt: You need salt to bring out the nuttiness of the seeds. I highly recommend using kosher or sea salt, but you can use table salt as well.
- Other seasonings: Because seeds are a blank canvas, you can add other spices such as onion powder, garlic powder, or even fajita seasoning.

How To Roast Butternut Squash Seeds

- Clean your seeds from any orange pulp and dry completely.
- Toss with olive oil, salt, and any desired seasonings.
- Bake at 400F for 10-15 minutes or until golden brown and crispy, stirring them around halfway through baking.
Store leftover roasted butternut squash seeds in an airtight container at room temperature for up to 1 week.

How To Roast Butternut Squash Seeds In Air Fryer
Don’t want to turn on your oven? Air fry your seeds at 400F for 5-8 minutes.
Roasted Butternut Squash Seeds

Ingredients
- Seeds from 1 butternut squash
- 1-3 teaspoons olive oil
- Kosher or sea salt, to taste
- Other seasonings such as garlic powder, onion powder, or fajita seasoning (optional)
Instructions
- Preheat oven to 400F. Have a baking sheet ready.
- If you haven't already, cut the butternut squash vertically in half and scoop out the seeds. Wash off any orange pulp remaining then completely pat dry.
- Toss seeds with 1 teaspoon oil and as much salt/seasoning as desired. If you have a lot of seeds, you can use the additional 1-2 teaspoons oil.
- Spread evenly on baking sheet and bake 8 minutes. Stir around with a spoon then bake another 5-8 minutes or until golden brown and crispy. Cool completely before eating.
Alternatively, add seeds to air fryer and air fry at 400F for 5-8 minutes.
Store leftover seeds in an airtight container at room temperature for up to 1 week.
