Espresso Brownie Mix
Serves: 24 brownies
Brownie Mix
  • 1-quart jar
  • 1 1/4 cups flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 3/4 cup Dutch-process cocoa powder
  • 2 tsp espresso powder
  • 1/2 cup chopped walnuts
  • 1 1/2 cups sugar
  • 6 ounces dark chocolate, chopped (or chocolate chips)
To make the brownies
  • 12 Tbsp unsalted butter, melted
  • 2 eggs
  • 2 tsp vanilla extract
  1. In a medium bowl, sift together the flour, baking powder, and salt. Pour into the jar.
  2. In a small bowl, whisk together the cocoa and espresso powder. Pour into the jar on top of the flour mixture.
  3. Add the walnuts into the jar followed by the sugar then followed by the chocolate. Seal and decorate as desired.
  4. To make the brownies: Preheat the oven to 350F. Lightly grease 13x9 inch pan. Set aside.
  5. In a large bowl, whisk together the jarred contents, butter, eggs, and vanilla. The batter will be thick. Spread the batter evenly into the pan. Bake 20-25 minutes or until a toothpick inserted into the center comes out clean. Let cool completely before cutting into squares and serving.
